Iono Snow-Aged Junmai Daiginjo Genshu

A pure Daiginjo matured in snow, as brilliant as a summer fireworks festival.

Iono is a collaboration with the Takanoi Sake Brewery of Niigata Prefecture. “Iono” is an old name for Uonuma region, where the brewery is located. This sake undergoes a unique ageing process – buried in snow in a stainless-steel tank at sub-zero temperatures. This slow, cold ageing process gives the sake a rounded, elegant profile. The label depicts a traditional fireworks festival held every year in the region, and the beautiful flavours of this sake are just as spectacular.


Flavour profile

Highly aromatic, with fresh fruit aromas of ripe pear, white peach and green apples. The smooth, fruity character envelops the palate, closing with a vibrant finish. A sake with presence and class.
