This sake is a collaboration with the Kumaya Sake Brewery of Kurashiki, Okayama Prefecture. In pursuit of the best possible quality, the brewery sources their rice locally from contracted growers using sustainable agricultural techniques. Omachi is a variety known for its ability to mature in bottle, and the careful brewing techniques and use of bottle maturation at the Kumaya Brewery draw out the variety’s fullest potential.
