Iono Karakukuchi Yamahai Junmai Ginjo Genshu

A classic Yamahai Ginjo as bold and memorable as the lantern festival depicted on the label.

Iono is a collaboration with the Takanoi Sake Brewery of Niigata Prefecture. “Iono” is an old name for Uonuma region, where the brewery is located. The Yamahai Junmai Ginjo combines and elegant style with the umami of the Yamahai sake brewing technique. The label depicts a famous lantern festival held each year in the region, and the sake is every bit as lively and impactful.

Flavour profile

Wholesome aromas of banana, yoghurt and steamed sweet buns. Smooth on the palate with refreshing acidity and just a dash of astringency that are impeccably balanced by rich umami. Smooth and refreshing when chilled, we equally recommend serving warm to enjoy its richness and umami to the fullest.

Staff comments

When it’s New Years’, in Japan everybody is going to be drinking sake! Pair it with the classic Japanese New Years’ Osechi, with snacks or your hors d’oeuvres. Definitely by its beautiful, glossy umami, this Yamahai Junmai Ginjo is floral without being overly showy. Slightly on the dry side, making it all the better for food pairings, try it with meat or fish, Japanese or western cuisine, and watch how it takes things to the next level. An excellent partner to hard cheeses too.
