Mizunokatachi Junmai Ginjo Genshu

Made from a water source of excellent quality, this sake has a palate as fresh and invigorating as spring water.

Mizunokatachi is a collaboration with the Mikunihare Sake Brewery of Kurobe in Toyama Prefecture. The spring located on the brewery grounds is one of the Hundred Famous Waters of Japan, inspiring this sake’s label and name (translated as “the shape of water”). This sake melts effortlessly into the palate, as elegant and gentle as the water used to make it.


Flavour profile

Smooth and soft, this sake permeates the palate with a gentle caress. It expresses the fresh minerality of water trickling of rocks, intermingled with notes of white peach. A beautiful expression of the water from which it is made, perfect for pairing with seafood – especially if sourced from the Toyama Bay, overlooked by the brewery where Mizunokatachi is made.

Staff comments

Gentle notes of koji richness, smooth and pure thanks to the beautiful water used to make it, Mizunokatachi melts into the palate. Pairing well with a broad range of food, especially fresh seafood (all the more so if sourced from the sake’s home prefecture of Toyama). Excellent with squid (add ginger and soy sauce to taste), seabass or dried fish.
