Fuji Takasago Sake Brewery
Kumo-no-Ue Mt. Fuji Fukuryusei-jikomi Tokubetsu Junmai
Made with ultra-soft water sourced from Mt. Fuji, this is a seductive sake overflowing with umami.
This sake is a collaboration with the Fuji Takasago Sake Brewery. Using ultra-soft water that begins as rainfall on Mt. Fuji and is gradually filtered through the mountain, finally emerging as an underground stream, this sake melts into the palate. Rice, water and yeast are all sourced from the brewery’s home of Shizuoka Prefecture, and their Shizuoka-born Toji make sake with seductive sweetness and gentle umami. Mt Fuji, which plays such an important role in the birth of this sake, is depicted on the label.

Staff comments
Made using ultra-soft water that has filtered through the mountainside of Mt. Fuji, this sake melts into the palate. Rounded, perfumed notes of banana muffin rise from the glass. Serve lightly chilled in a wine glass to enjoy its aromas and umami to the fullest. Try pairing with raisin butters or cream cheese.
