This collaboration with the Kumaya Sake Brewery in Kurashiki, Okayama Prefecture uses specially sourced, high-quality Omachi rice from contracted local growers. Their careful brewing techniques show off the signature umami of the Omachi rice variety to its fullest potential. This “Hiyaoroshi” bottling is released after half a year of in-bottle maturation for a more rounded, relaxed profile.
