This sake is a collaborative release with the Koikawa Sake Brewery of Yamagata Prefecture, matured in wine casks that were previously used to age white wine in the South of France. Following its time in barrel, the sake dons pleasant oak aromas, just as if it were wearing a kimono for a special occasion. The combination of sake and wine cask ageing have created a whole new world of flavours, and this bottling from the Koikawa Sake Brewery will only get better with age.


Flavour profile

Fresh green apples and rich rice are in perfect harmony, layered with notes of vanilla from ageing in wine casks. The distinctive lift on the finish proves that this can’t be anything but sake.
