Iono is a collaboration with the Takanoi Sake Brewery of Niigata Prefecture. “Iono” is an old name for Uonuma region, where the brewery is located. The label for the Iono Tokubetsu Junmai Hiyaoroshi depicts rice being harvested in the region, a classic Autumn scene. Matured for a half-year in bottle and released at the start of Autumn, this sake is wrapped in plentiful umami that makes it perfect for pairing with wholesome Autumn fare.
