Kazakiri Tokubetsu Junmai

Taking its name from the birds that fly over the sea by which the brewery is located, Kazakiri is a sake born for pairing with seafood.

Kazakiri is a collaboration with the Chiyomusubi Sake Brewery of Tottori Prefecture. Located by the sea in the port town of Sakaiminato, it is named for the seabirds that can be seen twirling above the bay. Using Tottori Prefecture’s signature rice variety, as one would expect from a sake made by the sea its deep and rounded umami and fresh finish is perfect for pairing with seafood.

Flavour profile

A fragrant, complex nose. Floral notes of sweet osmanthus are accompanied by aromas of nuts and cocoa. Pleasant umami, a black tea-like character that hints at the sake’s maturity and a satisfyingly crisp acidity that whets the appetite.

Staff comments

Born from the port town of Sakaiminato, this sake is perfect for pairing with seafood. Excellent served hot, enhanced by its impressive acidity, try serving it at temperatures as high as 50-60C, and see how its profile changes as the temperature gradually comes down. Equally delicious served chilled, where its subtle black tea character will charm your palate. Pair with Japanese style hot pot or bouillabaisse. A great sake for wintertime.
