Ryusei Baila is a collaboration with the Fujii Sake Brewery of Takehara, Hiroshima Prefecture. The name Baila is taken from a character in Buddhist mythology. The brewery aims for an honest style of sake that expresses the flavours of the rice and water used to make it. Subtle aromas and a rice, firm umami define this sake’s style and make it excellent for enjoying with food.


Flavour profile

Mild aromas of pear and banana create a laid-back profile. On the palate, pronounced banana-like umami and invigorating kiwi fruit flavors are met with a pithy core of crisp acidity. Dense on the palate but with a satisfyingly clean finish.

Floral aromas of jasmine and osmanthus accompanied by savory, spicy notes of nuts, star anise and cloves, wrapped up in a well-structured body. Pair with nutty dishes or lightly seared fish or meat.
