This collaboration with the Kumaya Sake Brewery in Kurashiki, Okayama Prefecture uses specially sourced, high-quality Omachi rice from contracted local growers. Their careful brewing techniques show off the signature umami of the Omachi rice variety to its fullest potential.

A sake made from Okayama-grown Omachi, a rice known for its ageing potential. With time in bottle it begins to blossom, the the An Tokubetsu Junmai is very much in its drinking window. Rich umami envelops the palate, with fresh acidity adding an elegant side to this powerful sake. Pairs well with tuna onigiri, with enough character to match with stronger flavour profiles. In winter, try serving it hot with onion and tuna hot pot.
