This collaboration with the Kumaya Sake Brewery in Kurashiki, Okayama Prefecture uses specially sourced, high-quality Omachi rice from contracted local growers. Their careful brewing techniques show off the signature umami of the Omachi rice variety to its fullest potential. A small proportion of each year’s sake is released unpasteurised for an extra fresh and powerful expression.
