Brewed with the oldest sake yeast in Japan, Michikake combines fresh, high acidity with a wine-like profile for a truly modern style of sake.
Michikake is a collaboration with the Wakatakeya Sake Brewery of Fukuoka Prefecture’s Kurume. Using the first ever yeast specifically used to make sake, known as Saccharomyces Sake Yabe, it is imbued with an incredible vitality, combining tradition with modernity. Refusing to be bound by definitions of what sake ought to be, Michikake is sometimes sherry-like, sometimes wine-like, and always mysterious – just like the moon on the label, Michikake has many different faces, and the pleasure is in discovering them as they appear in the glass.
Flavour profile
Complex, bewitching aromas of muscat and yellow peach. Flavors of melon, juicy black table grapes, and a distinctive dairy-like umami and dry, crisp acidity. An intriguingly complex sake.

With a flavour profile like no sake you’ve ever tasted before, Michikake is light on its feed with a fresh bead of acidity, fruity flavours underlayered with complex layers of nuttiness and umami. Pair with anchovy pizza or a mentaiko pasta and spend a relaxing holiday afternoon with this sake.
