Haregi Wine Cask Aged Kimoto Tokubetsu Junmai Genshu

Combining the taut acidity of a Kimoto sake and ageing in wine casks, enjoy for its mature aromas.

Haregi is a is a collaborative project combining sake with maturation in wine casks. Haregi Tsuru was made in collaboration with the Tanaka Sake Brewery, also the maker of “Manatsuru”, using wine barrels previously used to mature white wine in the South of France. The result is a sake greater than the sum of its parts, with distinctive notes of barrel ageing. The sake wears these aromas just as if it is putting on a kimono for a special occasion, inspiring the label design of this series. Combining classic kimoto sake brewing with the new concept of wine barrel ageing has given birth to a whole new kind of sake.


Flavour profile

Notes of vanilla from wine casks add depth and complexity to the fruity aromas of pineapple and yellow peaches. Pleasant, rounded acidity with a bittersweet note lingering on the finish. A new and innovative style of sake.

Staff comments

A fantastic combination of the finely multilayered, complex umami of Kimoto sake and the aromas of barrel ageing. The result is somewhere between Fino Sherry and Grand Cru Chablis. Pair with sole meunière.
