Ryusei Baila Kioke Hakko Tokubetsu Junmai

Brewed in traditional wooden kioke vats, a perfect combination of powerful umami and gentle roundness.

Ryusei Baila is a collaboration with the Fujii Sake Brewery of Takehara, Hiroshima Prefecture. The name Baila is taken from a character in Buddhist mythology. Brewed using Kioke (traditional wooden vats historically used to make sake), a rare technique that gives the sake extra depth and body.


Flavour profile

Mild aromas of pear and Chinese quince complemented by the rounded umami of freshly prepared sticky rice cakes and a nutty richness. A firm line of acidity harmonises with the umami, creating a satisfying profile that goes well with meat and dishes with a higher oil content.
